Vegan Chocolate Self Saucing Pudding

COOKIE DOUGH SMOOTHIE

Ingredients
Pudding
    • ⅓ cup Loving Earth Coconut Sugar

    • ½ cup gluten free flour (best quality you can find)

    • ½ cup almond meal

    • 1 tsp baking powder

    • 50g melted Loving Earth Dark Chocolate

    • 1 flax egg (1 tbsp flax meal mixed with 3 tbsp water)

    • 2 tbsp Loving Earth Coconut Oil

    • 1 tbsp soy mylk

Chocolate Sauce
    • 2 tbsp Loving Earth Cacao

    • ½ cup Loving Earth Coconut Sugar

    • 200ml boiling water

Method
Step 1

Preheat oven to 180C.

Step 2

In a bowl combine the coconut sugar, flour, almond meal and baking powder, stir to combine.

Step 3

Prepare the flax egg by mixing 1 tbsp flax meal with 3 tablespoons of water, set aside for 5 minutes.

Step 4

Melt the chocolate and add to the dry mix along with flax ‘egg’ coconut oil and mylk.

Step 5

Stir to combine and pour into a greased baking dish (approx. 20x20cm).

Step 6

Prepare the sauce by mixing all of the listed ingredients, pour over the batter and bake in the oven for 20 – 25 minutes.
